Lechon: Fully roasted pig.
The entire pig is roasted, much like at a Hawaiian luau. The skin is roasted to crisp, shiny brown coat.
It can be eaten right after it is roasted or put into a stew (called Lechon Kawali).
The staple "lechon sauce" also accompanies the roasted delicacy. Pancit: A contribution of Chinese, rice noodles are placed in a special sauce of an orange color. There are many different types of pancit dishes. Shrimp, green onion leaves, garlic, and lemon is usually put into Pancit Palabok. Pancit Canton consists mainly of noodles in soy sauce and can be served with anything. Pancit Luglog is a noodle soup. Visayan cuisine also offers Pancit Molo, similar to wonton soup. Click pic for recipe. Adobo: Derived from a Mexican dish, adobo is a stew that can be made practically out of anything. Chicken and beef are flavored with spices. Very common in any household, rice or poor. Click pic for recipe. Monggo: Better known as mung beans, monggo is used in many different dishes. Monggo beans can also be cooked alone with vegetables in a type of vegetable stew. Hopia, similar to Chinese mooncakes, are usually filled with sweetened monggo beans. |
